SOTO BETAWI

Bahan:
500 g daging sapi (bagian sandung lamur, kalau suka campur bersama onderdilnya alias babat, usus, paru, limpa)*
1 liter kaldu daging
750 ml santan dari 1 butir kelapa
5 lembar daun jeruk
1 lembar daun salam
3 cm kayu manis
3 butir cengkeh
1 sdt pala bubuk
1 cm lengkuas, geprek

Bumbu Halus:
15 butir bawang merah
7 siung bawang putih
1 sdt ketumbar, sangrai
2 cm jahe
5 butir kemiri, sangrai
¼ sdt jintan, sangrai
1 sdt merica
Garam


Pelengkap:
Tomat, iris
Bawang goreng
Daun bawang
Emping goreng

Cara Membuat:
Tumis bumbu halus, kayu manis, cengkeh, daun jeruk, daun salam, lengkuas, dan pala bubuk hingga harum.
Masukkan daging. Aduk sampai berubah warna.
Tuang kaldu daging. Masak sampai mendidih.
Masukkan santan. Masak sambil diaduk-aduk sampai matang dan bumbu meresap. Angkat
Hidangkan panas-panas beserta pelengkap.


* jika pakai onderdil sapi, rebus para onderdil terpisah dari daging. Buang airnya. Potong onderdil kotak-kotak.
