MADURANESE BEEF SOUP (SOTO MADURA)

250 g beef, boiled in 5 cups water until tender and cut in ¼-inch cubes
250 g beef tripe (optional), cleaned and washed well, Rinse tripe well under running water until very clean. Bring water to a boil in a stockpot, add tripe and simmer until soft (approximately 2 hours).Strain water and cool tripe in ice water. Cut in pieces.
4 cups beef broth
1 stalks of lemongrass
3 kaffir lime leaves
Cooking oil
Spice Paste:
8 shallots
4 cloves garlic
1 cm fresh ginger
3 cm of turmeric
Salt & pepper
Toppings:
1 stalk of spring onion sliced thinly
Some Celery, chopped
Lime, slices
Some fried shallot crisps
Chili Paste, pounded:
7 red bird's-eye chilies, (deseeded and soaked to soften)
1/4 teaspoon of salt
Method:
1. Bring the beef broth to boil and add in beef and tripe.
2. Using a mortar and pestle, blend the spice paste.
3. Heat up some oil in the wok and sauté the spice paste, lemon grass, and kaffir lime leaves until fragrant.
4. Bring into beef broth and continue to boil in low heat until the beef and tripe are thoroughly cooked.
5. Serve hot with toppings, steamed rice, and more chili paste to taste.
